Nutty Granola
4 Cups Oats -I like the sprouted rolled oats
2 cups Raw Pecans
2 Cups Raw Walnuts
1/2 Cup each Pepitas & Sunflower Seeds
1 Cup Shredded Coconut
2 t Cinnamon
1 Heaping Teaspoon Salt
1 T Vanilla Bean Paste
3/4 cup Coconut oil
3/4 cup Honey or Maple Syrup
Combine oats, nuts, seeds, coconut, salt and cinnamon in a large mixing bowl, mix gently and set aside
In a small saucepan combine the remaining ingredients and warm gently until both are viscous enough to work. pour warmed saucepan honey oil mixture to the bowl of dry ingredients and combine throughly.
Line 2 sheet trays with parchment paper and split the bowl of granola in half onto each of the lined sheet trays.
Bake at 275 for about 1 1/2 hours, tossing around with spatual about every 20 minutes to ensure even cooking. Once it becomes auburn in color it is good to pull from the oven. Let cool completely on the sheet trays- it fully crisps during this time.
Optional Add-Ins Post baking: 2 cups of any dried fruit that appeals to you. I enjoy crasins, dried strawberries and dried blueberries and chopped dates.
